Sour Coconut & Lime Soup

2 cans of coconut milk

3 cloves of garlic grated

Juice of 2 limes

2 tsp cumin

2 tsp ground coriander

500ml veg stock

tsp of honey

1 teaspoon of rice/cider vinegar

1 Courgette cut in half length ways, and shredded with a peeler.

2 Carrots shredded with a peeler.

2 Onions halved and thinly sliced.

Hand full of bean sprouts.

Cabbage halved and thinly sliced

Handful of fresh coriander

Method

Add veg stock to a pot and bring to a simmer.

Add the cumin, coriander seeds, garlic, lime juice, cider vinegar, salt, honey and adjust to your taste.

Bring the mix to just below a simmer and add coconut milk, this should prevent it from splitting (although it still tastes good if it does).

Once tasting good mix in the prepared veg and cook for just a few minutes so the veg is still bright in colour.

Mix in the fresh coriander just before serving.

This soup should be slightly sour from the lime and vinegar but keep a bit of sweetness with the coconut milk, so adjust these quantities to your taste.
